Recipe: Avocado Ice Cream

Summer is officially here and that means ICE CREAM!!!

This Avocado ice cream is creamy, rich, and oh so satisfying. Plus it’s super simple to make with just three ingredients!

While I truly believe that you should eat whatever you want, whenever you want, ice cream is a little too cold and heavy for my kapha most of the year. But now that it’s HOT out, I’ll enjoy ice cream as an occasional midday treat.

Avocados are naturally cooling, and paired with coconut, then frozen, this dessert is extra COOL! So keep in mind that it will chill your digestive fire. I’ve added honey which is heating and astringent to help balance it out.

I love that this sweet treat is nutrient dense, high in fiber (thanks to the avocados) and refined sugar free. I also like the idea of adding in flavors like matcha or cacao for something different.

So are you ready to step your ice cream game up a notch?! Let’s make the summer dessert of your dreams…

Ingredients:

2 Ripe Avocados

1/2 C coconut milk

2 T Honey (sub agave or maple syrup to make vegan)

Optional add - ins:

1 t matcha powder or 1 T cacao

To Make:

Blend all ingredients in a blender or food processor. Pour into glass dish and freeze 1-2 hours. For softer ice cream, let thaw a few minutes before serving.
